1. In a large bowl beat the softened cream cheese until smooth. Make sure to scrape down the sides and bottom of the bowl and get out all the lumps.
2. Beat in 1/4 c powdered sugar and 1/4 c sour cream. Add in a little vanilla if you like.
3. Cut the strawberries into little pieces and then mix the strawberries and the cheesecake mixture together. Store covered in refrigerator until it's ready to be served.
