Ingredients of Cheesey Spinach Enchilada s

1. Make ready 1 of red onion diced.
2. You need 2 can of spinach drained well.
3. You need 2 tbsp of chopped garlic.
4. Make ready 4 oz of cream cheese.
5. Prepare 1 of jalapeno diced fine ( can chop up canned jalepeno ).
6. You need 10 of flour taco/fajita shells.
7. Make ready 4 cup of mexi shredded cheese.
8. Make ready 1 of large can of enchilata sauce.
9. It’s 1 tbsp of veg oil.

Cheesey Spinach Enchilada s instructions

1. Saute onion in veg oil.
2. When cooked add spinach & garlic.
3. Mix well, add cream cheese and jalepeno, mix untill well combined.
4. Set aside to cool.
5. Add spinach mixture with a hand full of cheese, roll up , put seam side down in a sprayed large baking dish.
6. Pour sauce and the rest of the cheese over the enchiladas..
7. Bake 350 for about 15 min.
